I've just found a pita bread recipe that looks totally delicious and simple. I try to avoid buying my pitas when making my own souvlaki at home as they are full of conservatives and sugars. This recipe by chef Andreas Lagos is a great alternative to the ready made ones and can be stuffed with tons of different ingredients rather than the traditional skewers of grilled pork and tzatziki.
ingredients
10 gr. dry yeast
2 tsp sugar
4 tbsp sparkling water
150 gr. yogurt
2 tbsp olive oil
2 tbsp roasted sesame
1 tbsp black sesame
320 gr. all purpose flour
1/2 tsp salt
steps
1 In a cup, activate the dry yeast by combining it with sugar with warm water.
2 In a bowl, mix all the ingredients until you have a stretchy dough. Leave the dough to rest for approx. 20-25 minutes in a warm place.
3 Divide the dough into about 6-7 small pieces and flatten one of them with a rolling pin.
4 Heat up a non-stick frying pan over medium-high heat. Place a pita and let it cook for 2-3 minutes, then flip it over and cook for another 2-3 minutes.
